Our Recipe
Sambusa have always been our favorite snack, and I remember as small child sharing with my siblings and friends at home, at school and during celebrations. I have never met anyone who didn’t love Sambusa - even first time tasters. The biggest challenge was how to develop an authentic Sambusa recipe from starting from scratch and taking it to a commercial level.
Typically, Somali recipes are unwritten formulas passed down from generation to generation through oral tradition. There are no written notes about specific ingredient measurements and temperatures. Luckily, my business partner’s mother, who is a Somali culinary expert, was resettled in Phoenix. She had spent more than 10 years in a refugee camp in Kenya, where the living conditions were very tough. Once here in Phoenix she began trying to recapture the aroma, appearance and texture of the Sambusa she had made in Africa. It took her a while to re-craft the authentic recipe of her great-accentors. The next challenge was to produce Sambusa using modern kitchen equipment and controlling the temperature during a slow cooking process. The process of blending the authentic ancient recipe with modern equipment and contemporary flavors took more than a year.

To achieve this goal, the Sambusi Factory LLC plans continuous rapid expansion of its wholesale operations while gradually establishing retail sites offering freshly prepared great-tasting food at affordable prices in a comfortable environment.
